The fat to avoid comes mainly in the form of saturated fat. When you consume red meat, chocolate, or butter, you're taking in saturated fat. Safer fats to consume include the monounsaturated and polyunsaturated fats. These include

Some fat in the diet is essential for great health, but too much, especially saturated fat, dramatically increases the risks for chronic diseases.

Smoky Eggplant & Yogurt Purée Recipe

This Turkish grilled eggplant purée is much like the Middle Eastern classic, baba ganoush, with yogurt standing in for tahini. When grilling whole eggplants, seek out smaller ones.

(Makes 1½ cups, serves 6)

Ingredients
600g eggplant
2 garlic cloves, mashed in a mortar and pestle with a generous pinch of salt
(more to taste)
2 tbsp lemon juice
1 tbsp extra virgin olive oil
¼ cup drained yogurt
Salt and freshly ground pepper to taste
Chopped fresh mint for garnish
1. Prepare a hot grill. Pierce the eggplant with the tip of a knife or a skewer.
2. Grill until they are uniformly charred and the flesh is very soft and beginning to ooze.
3. Transfer to a bowl, and cover tightly.
4. Allow the eggplants to cool until you can handle them, then remove the skin and stems.
5. Discard any juice in the bowl.
6. Transfer the eggplant to a food processor fitted with the steel blade or to a bowl. Mash with a fork, or purée in the food processor.
7. Add the remaining ingredients, and combine well.
8. Taste and adjust seasonings. The purée will be slightly runny, but it will stiffen up. Transfer to a serving bowl.
9. Serve warm or room temperature with pita bread or crudités.

Advance preparation: Although this is best served warm, you may prepare it hours ahead and serve it at room temperature, or reheat for about 30 seconds in a microwave.

Tuna with Roasted Pepper Sauce

Ingredients:

SAUCE: 1/2 cup roasted red peppers -- 1/2 - 3/4, drained 1 1/2 teaspoons dried dill weed 2 teaspoons garlic -- fresh, finely chopped 1/4 teaspoon salt 1/8 teaspoon pepper 1/3 cup sour cream

TUNA: 2 thick tuna steaks -- (1") 1 tablespoon Olive Oil 1 teaspoon paprika 1 teaspoon chili powder

How to Prepare:
Prepare grill, heat until coals are ash white. Cut each tuna steak
into 2 pieces. Combine oil, paprik & chili powder in small bowl. Brush onto both sides of tuna. Place tune on grill. Grill, turning once, until fish flakes easily with fork (8-12 mins). Meanwhile, combine all sauce ingredients EXCEPT sour cream in 5 cup blender or food processor fitted with metal blade. Blend at high speed until  smooth (30 seconds). Pour pepper misture into 1 qt saucepan. Stir in sour cream with wire whisk. Cook over med heat until heated thru, 1-2 minutes. Spoon sauce onto serving plates, top with tuna.

1. For biscuits, allow five minutes to mix and stir the butter, shortening and sugar. If too long, the biscuits will not turn out right.

2. For a better-textured cake, use buttermilk instead of milk because buttermilk contains more acid than milk. If you don’t have buttermilk, you can make your own buttermilk by stirring in one tablespoon of lemon juice or vinegar into one cup of milk.

3. For a lighter cake, separate the eggs and add the yolks to the butter mixture first. Then whip the egg whites separately using clean beaters until they form soft peaks. Then fold them into the cake batter.

4. Rinse measuring cup in hot water before using syrup, oil, etc. It will come out clean and not stick to cup.

Creamy Potato Cheese Soup Recipe

Ingredients

1 tablespoon dried basil
1/2 stick (4 tablespoons) butter
2 cups shredded smoked Gouda cheese
6 small red potatoes, diced and reserved in cold water to prevent browning
2 diced carrots
2 diced celery stalks
1 white onion, diced
1 teaspoon garlic-shallot puree (or 2 cloves garlic, crushed)
2 cups heavy cream
6 cups chicken broth

Turn stock pot on medium high. Melt butter. Add celery, onion, carrots. Cook down until onions are transluscent. Add basil and garlic-shallot puree. After 3 minutes, add potatoes and stir another 3 minutes.

Carefully pour in 6 cups chicken broth. Boil for 20 minutes, then stir in a roux made from 4 tablespoons flour and 4 tablespoons butter.

Wait a few minutes for the soup to thicken slightly. Add cream. Whisk and simmer for 20 minutes.

Slowly stir in cheese and melt it down. After cheese is melted, pour into bowls and season with salt and fresh cracked pepper.
